Scrumptious Vegetable Soup

Servings 6-8

INGREDIENTS

  • 3 tbs olive oil
  • 6 garlic cloves, minced
  • 1 small onion
  • 2 stalks celery sliced
  • 1/2 lb white mushrooms
  • 3 medium carrots peeled and sliced
  • 2 zucchini sliced
  • 1 head of broccoli sliced into florets
  • 3 russet potatoes cubed
  • 8 cups vegetable broth
  • 1 teaspoon turmeric
  • 1 1/2 teaspoons cumin
  • salt and freshly ground black pepper to taste

PREPARATION

  1. Cut up all of the vegetables and set aside.
  2. Warm the olive oil in a large soup pot.
  3. Sauté onions, celery, carrot until slightly tender. About 5 minutes.
  4. Mix in garlic and mushrooms, turmeric, cumin and sauté and additional minute.
  5. Add vegetable broth and remaining vegetables and bring to a boil.
  6. Reduce heat and simmer for 30 minutes or until all of the vegetables are tender.
