Quinoa Apple, Raisin & Cinnamon Breakfast Bowl
Serves 2
INGREDIENTS
1/2 cup quinoa
1 1/4 cups water
1 apple cut into small pieces (reserve half)
1 cinnamon stick
1/4 cup raisins
1 1/2 tsps cinnamon
1/8 cup chopped nuts (any)
PREPARATION
Rinse and drain quinoa
Cut up apple into bite size pieces
Add quinoa, 1/2 the chopped apple, cinnamon and cinnamon stick to a sauce pan
Bring to a boil, reduce the heat to a simmer, cover and cook 15 minutes until the liquid has absorbed.
Serve with the rest of the chopped apple, your choice of nuts and an additional sprinkle of cinnamon if desired.
