Quinoa Apple, Raisin & Cinnamon Breakfast Bowl

Serves 2

INGREDIENTS

  • 1/2 cup quinoa
  • 1 1/4 cups water
  • 1 apple cut into small pieces (reserve half)
  • 1 cinnamon stick
  • 1/4 cup raisins
  • 1 1/2 tsps cinnamon
  • 1/8 cup chopped nuts (any)

PREPARATION

  1. Rinse and drain quinoa
  2. Cut up apple into bite size pieces
  3. Add quinoa, 1/2 the chopped apple, cinnamon and cinnamon stick to a sauce pan
  4. Bring to a boil, reduce the heat to a simmer, cover and cook 15 minutes until the liquid has absorbed.
  5. Serve with  the rest of the chopped apple, your choice of nuts and an additional sprinkle of cinnamon if desired.
