Banana Peanut Butter Ice Cream

Serves 2

INGREDIENTS

This stuff is da bomb! Easy peasy & super delicious!

  • 2 ripe bananas
  • 1 tbs or so of milk or almond milk
  • 1 tbs of peanut butter
  • 2-3 small squares of 72% -88% dark chocolate melted about 1/5 of the bar. I like the Endangered Species brand (optional)
  • 5 or 6 raw or toasted nuts  chopped (optional)

PREPARATION

  1. Slice ripe bananas thinly and place in a plastic bag or glass container in the freezer. Allow to freeze overnight or for at least 6 hours.
  2. Place frozen bananas in a food processor or blender with a tablespoon of milk and peanut butter. (A food processor works the best.)
  3. Blend until creamy.This make take 2 min or so.  You may need to add more milk and mash up the banana a little bit as you blend.
  4. Heat a pan over medium-low heat and add chocolate to melt it. This can be done when you are almost finished blending the ice cream. The chocolate will harden quickly.
  5. Transfer ice cream to a bowl and pour warm chocolate over it. You can also add some chopped nuts.
