Delicious 3-Ingredient Pancakes

Serves 1 (recipe can be easily doubled or tripled)


  • 1 large ripe banana
  • 2 eggs
  • 1/8 tsp baking powder


  1. Mash up banana with a fork and transfer to a mixing bowl. If your banana isn’t too ripe a mini-food processor will help puree it to the right consistency.
  2. Whisk in 2 eggs
  3. Add baking powder and mix well until everything is combined
  4. Melt butter in a frying pan over medium-low heat
  5. Ladle mixture into pan (smaller pancakes will be easier to flip)
  6. Cook until underside is golden brown (about 2 min) flip and cook another minute or so more.
  7. Serve with berries, nuts or whatever meets your fancy.
