Serves 1 (recipe can be easily doubled or tripled)
INGREDIENTS
1 large ripe banana
2 eggs
1/8 tsp baking powder
PREPARATION
Mash up banana with a fork and transfer to a mixing bowl. If your banana isn’t too ripe a mini-food processor will help puree it to the right consistency.
Whisk in 2 eggs
Add baking powder and mix well until everything is combined
Melt butter in a frying pan over medium-low heat
Ladle mixture into pan (smaller pancakes will be easier to flip)
Cook until underside is golden brown (about 2 min) flip and cook another minute or so more.
Serve with berries, nuts or whatever meets your fancy.
